Coal math, made simple
Forget precise temperatures; use the charcoal-briquette rule of thumb. For roughly 350°F, take your oven’s diameter in inches, and use that many coals PLUS three on the lid, and that many MINUS three underneath. So a 12-inch oven at 350°F: 15 coals on top, 9 on the bottom.
